Mini sausage rolls

Hi!

On Sunday I baked mini sausage rolls.

As a child, when my mother baked them I was always super happy. I loved them and I still do!



My son loves them too. As long as there is a sausage as a main ingredient is everything perfect (we live in Germany...).

There are no secrets to make the sausage rolls. It's easy and tasty.

Ingredients:
  • 1 package of puff pastry
  • 8 sausages (I used Bockwurst)
  • 1 egg
Unroll the pastry and cut it in triangles.
Cut the sausages in 4 (each sausage is cc. 15-16 cm long) and then roll each pastry triangle around each piece of sausage.
Glaze with egg and bake at 200°C (pre-heated oven) for about 20-30 minutes. 

I love them!

Omelette with mushrooms and Brussels sprouts

Hi

Yesterday I was looking in the freezer for something to cook and I found a few Brussels sprouts. Really only a few... and I decided to cook an omelette.

The result: omelette with mushrooms and Brussels sprouts.



Ingredients:
  • a few mushrooms
  • a few Brussels sprouts
  • 3 eggs
  • milk (to whisk the eggs)
  • olive oil
  • salt
  • pepper
Put a little olive oil in a pan. When hot, add the sliced mushrooms and some salt. Sauté.



Add the Brussels sprouts, cut in half, and sauté.



In the meanwhile, whisk the eggs with a little bit of milk and some pepper.



Pour the eggs into the pan, cover and simmer over low heat until the eggs become solid at the surface (about 15-20 minutes). Then turn  over onto a plate.

Slide the omelet back into pan to golden the other side. Leave another 5 to 10 minutes, according to taste.

Salad in a jar #2

Hi!

Did you try to make a salad in a jar and take it to work? If you did not, you should try it! Here is another one.

I always use a 1 liter jar.

Ingredients:
  1. vinaigrette
  2. cooked quinoa (here is how I cook it)
  3. chickpeas
  4. chopped onion
  5. canned tuna
  6. 1 boiled egg

Quinoa with vegetables

Hi!

I love quinoa with vegetables. It's easy and tasty.

I start by cooking the quinoa with the Oatmeal kit (Lékué) and after that I can use the quinoa in salads or hot recipes.

Today I cooked with vegetables. Simply delicious! Healthy, easy and full of color!



Ingredients:
  • olive oil
  • 120 g already cooked quinoa (see here how I cook it)
  • 1 little chopped onion
  • 1 chopped carrot
  • 1 handful peas
  • 1 handful sweet corn
  • salt
In a pan, heat a little olive oil. When the oil is hot, add the chopped onion and let it caramelise.
Then, add the chopped carrot and stir.
Add the peas, stir, add the corn, season with salt and stir again. Let it cook for 2 minutes.
Add the quinoa, stir and cook for 5 minutes at low heat (or until the quinoa is warm, if you took it from the refrigerator).

Serve and enjoy!

How I cook quinoa

Hi!

Here is my way to cook quinoa. I use the Oatmeal Kit (Lékué) and the microwave and it works!

I follow the instructions that Lékué send with the kit to measure the quantities:
  • 120 g quinoa
  • 300 ml water
  • a pinch of salt
and then I cook it for 15 minutes in the microwave at 900 W.

Important: rinse the quinoa very well before you cook it. Otherwise it has a bitter taste...

After the 15 minutes, let it rest for 3 minutes.



Then you just need to loose the grains with a fork and you're done!



You can keep the quinoa in the fridge and use it in salads or add it to cooked vegetables.
